Chicken w/ Lemon Caper Sauce


Since I'm a sucker for anything tart & tangy, tonight I tried to spice up my chicken dish with a lemon caper sauce. It's always intimidating going outside your comfort zone, but this was worth the risk...

Lemon & Caper Sauce


Ingredients

1/2 Cup Butter
2 Tablespoons of Fresh Lemon Juice
1 Teaspoon of Salt
1 Garlic Clove (Minced)
1/8 Teaspoon Pepper
1/2 Teaspoon Paprika
1 Tablespoon drained Capers
2 Boneless/Skinless Chicken Breasts

Directions

1. In a skillet over medium heat, combine butter, lemon juice, salt, garlic, pepper, paprika, and capers.
2. Bring to a boil.
3. Arrange chicken in a baking dish & pour sauce over chicken.
4. Once the chicken is completely covered, put into the oven at 425 degrees for 30 Minutes.

Note: Every 10 minutes, pour sauce in baking dish over chicken until done time is complete.

This dish went great with some rice pilaf & a simple mixed green salad...yum!
