Chicken Cesar Salad


As the warmer months are quickly approaching, I'm trying to load up on some delicious salads that'll make it easier for me to get back into a swim suit again. This classic salad requires minimal ingredients, and its all fresh!

Dressing

2 tablespoons mayonnaise – or – 1 egg
1 tablespoon fresh lemon juice1/2 teaspoon Dijon mustard1 small garlic clove, minced1/2 teaspoon Worcestershire sauce, plus a drop or two more, to taste1 oil-packed anchovy fillet, finely chopped (optional)1/4 cup extra-virgin olive oil

Whisk all except last together. Gradually whisk in 1/4 cup olive oil. Season with salt and pepper. (Dressing can be made 1 day ahead. Cover and refrigerate. Bring to room temperature and rewhisk before using.)

Salad

1 Head of chopped romaine Lettuce
2 Tablespoons of finely grated parmesean cheese
2 handfuls of croutons 
1 chicken breast - Chopped (bake & season as preferred)

Combine lettuce, parmesean cheese, croutons, chicken, and dressing in a large bowl. Toss ingredients until mixed thoroughly and serve!
