bruschetta Bites
This dish is a lovely introduction before a big meal. It has all the main components, fresh, warm, crunchy, and simply delicious. I make this for small and large gatherings and it's always a hit!
Ingredients
8 roma (plum) tomatoes, diced
1/3 cup chopped fresh basil1/4 cup shredded Parmesan cheese2 cloves garlic, minced1 tablespoon balsamic vinegar1 teaspoon olive oil1/4 teaspoon kosher salt1/4 teaspoon freshly ground black pepper1 loaf French bread, toasted and sliced
Directions
1. In a bowl, toss together the tomatoes, basil, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper.
2. Preheat your oven at 400 degrees F.
3. Lay slices of bread on baking dish, and lightly drizzle olive oil over each piece.
3. Put slices of bread in the oven for 4 minutes.
4. Once the 4 minutes has completed, remove bread from oven and add bruschetta mixture on each slice.
5. Sprinkle parmesan cheese over each piece, and return to the oven for 3 minutes.
Once the 3 minute are up, I like to sprinkle the juices from the mixture over each piece for additional flavor.
